This salad has a little bit of everything. It has fresh melon, chewy dates, salty prosciutto, buttery pine nuts, soft mozzarella, peppery arugula and just a hint of fresh mint. All of these flavors are good but when they are all combined they are GLORIOUS!

I love this recipe because it is incredibly fresh. The only ingredient that actually needs to be cooked is the rice and if you have some leftover rice in the fridge then you've hit the jackpot... a healthy, delicious and beautiful meal that requires no actual cooking.

Do you ever open the fridge and realize you are really low on groceries? Then you stare are the few random ingredients you have wondering how the heck you are going to make dinner. Well that is what happened to me last night. So I had to use a little creativity. I had tofu, an avocado and zucchini. Doesn't sound like these three things could make any sort of cohesive meal, right? At least that is what I thought at first.

The salad isn't only beautiful and tasty but it is also INCREDIBLY healthy and nutritious. Including a variety of different flavors, colors, textures and shapes are what make a healthy dish appealing and delicious versus boring and bland. The goat cheese is what really brings everything together. While it is the least healthy ingredient in the dish, a very small amount makes a big impact and brings the rest of the ingredients together. 

How to Make Foods You Love Healthier: Spicy Tofu Tacos

Maintaining a healthy diet is important to me but I'm not willing to sacrifice the foods I love to do so. I am a foodie and I love to eat. I think food brings people together and should be something we enjoy (not only something that fuels our body). Therefore, I find ways to take delicious foods I love and make them healthy which brings be back to Spicy Tofu Tacos!
