Peanut Butter Blueberry Toast

Toast Week – Day 2

This is Day 2 of toast week. Yesterday we kicked off Day 1 with a Dried Apricot Pistachio Toast recipe complete with creamy mascarpone and a drizzle of honey! There will be more toast recipes posted everyday this week!


Do blueberries and peanut butter go together?

Heck yes! There is something about the sweet tart freshness of blueberries that compliments the nutty sweetness of peanut butter.

I have a Chai Seed Breakfast Pudding recipe that is chocolate and peanut butter flavored with fresh blueberries and the fresh blueberries are what make the whole recipe. Personally, I probably wouldn’t eat the breakfast pudding without blueberries… but once you add those blueberries some kind of delicious magic happens!

Where to get blueberries? My recommendation.

Costco. Yes, Costco is the place to get blueberries hands down. They have organic options and the quality is incredible but not as incredible as the low price. Seriously, the quality and price of organic produce at Costco can’t be beat.

Awhile back I did a pricing experiment with real life Costco purchases of healthy food. It is shocking and worth a quick read!

Side Note: The quantities are not as large as you might think. I shop there regularly for a family of two and we never have a problem finishing the quantities they provide.

Bread Recommendation

My favorite bread at the moment is Little Big Bread by Silver Hills Bakery. Again, I currently have no affiliation with this company. I just really like their bread!

It is sliced thinner than other varieties which is why I like it. Don’t you hate when you have an awesome sandwich or piece of toast but the bread is so dense and thick you can hardly taste anything but the bread?! 

Peanut Butter Recommendation

Try using chunky peanut butter instead of smooth. It is so crunchy and delicious! Don’t have crunchy peanut butter but want that crunchy goodness? Add a little granola to your toast!

This Peanut Butter Blueberry Toast is a 5 minute (or less) breakfast recipe that is both tasty and healthy. 

Ingredients
 

  • 1 slice bread, toasted
  • 1 Tbsp. peanut butter
  • 1/4 cup blueberries
  • A dash of cinnamon

Instructions
 

  • Spread peanut butter over toasted bread. Top with blueberries and a dash or two of cinnamon.
