This Italian Beef recipe is mouthwateringly good. It only takes 5 minutes to throw together in the slow cooker. Then let the slow cooker do the rest!
Ingredients
Italian Seasoning Ingredients (see note 1):
1/2Tbspsalt
1/2Tbspdried oregano
1tsponion powder
1tspdried parsley
1tspwhite sugar
1/2tspgarlic powder
1/4tspground black pepper
1/4tspdried basil
1/8tspdried thyme
1/8tspcelery powder
1/8tspred pepper flakes, (optional)
Remaining Ingredients:
3-4lbbeef roast, (see note 2)
12ozbeer, (1 can/bottle)
16ozjarred pepperoncini peppers + juice, (see note 3)
Instructions
Italian Seasoning: Make the Italian Seasoning by mixing all Italian Seasoning Ingredients in a small bowl until well combined (see note 1). Then use the Italian Seasoning to season all sides of the roast.
Slow Cook: Put the seasoned roast, the beer and the entire jar of pepperoncini peppers, including the juice, in a slow cooker. Cover and cook on low for 7-8 hours or until the roast can easily be pulled apart with two forks (see note 4).
Shred + Slow Cook (round 2): Remove the roast from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker for an additional hour (still on low) so the shredded beef can soak up all the delicious flavors.
Serve: Serve immediately or refrigerate in a sealed container until needed (see note 5). Tip: Serve the Italian beef with a side of the au jus from the slow cooker for dipping!
Notes
Note 1 - Italian Seasoning: A store-bought Italian seasoning packet can be substituted for the homemade Italian seasoning. Use entire packet.Note 2 - Roast: Any kind of roast will work. However, cheaper roasts (rump roast or chuck roast) are generally what I recommend for this recipe. There is no need to spend money on an expensive roast because cooking it low and slow in the slow cooker will make any roast tender and delicious!Note 3 - Pepperoncini Peppers: Pepperconcini peppers are very easy to find and come in a jar. Pour the entire jar into the slow cooker (peppers AND juice). Note 4 - Cooking Times/Doneness: If you are short on time, the roast can be cooked on high for 4-5 hours, flipping the roast halfway through cooking to keep the topside from drying out. However, the may not be as tender or easy to shred.Note 5 - Italian Beef Storage: I recommend storing the shredded Italian beef in the leftover cooking liquid from the slow cooker. The helps make the Italian beef incredibly flavorful and juicy.
