This Dried Apricot Pistachio Toast is a gourmet breakfast in under 5 minutes!

dried apricots
drizzle of honey

shelled pistachios
Instructions
Prep Ingredients:
Toast the bread. Roughly chop the pistachios (optional). Cut dried apricots into pieces or thin slices.
Assemble:
Spread mascarpone cheese on toasted bread. Top with dried apricots, pistachio and a drizzle of honey. Time to eat!
Notes
Other dried fruits such as dried figs and dates are great substitutes for dried apricots.
